Spinach is gorgeous, bold, and amazing for you, But the truth is, I don’t particularly love it. It makes a weird squeaky noise between your teeth and a salad mountain of greens is rather daunting. I do however buy a bag for my minimalist kitchen every time I’m at the grocery store. Here’s why – spinach can be added to tons of dishes and you’ll never even taste it! Why not add the healthful benefit without changing the flavor? My husband calls these “redemption leaves” because when I’m feeling guilty that a meal isn’t very healthy, I add spinach. I redeem the meal. It adds color and it certainly makes me feel better. Stock your kitchen with this super simple addition.
I enjoy veggie smoothies ALL the time. They are so an incredibly easy way to add large amounts of vegetables to your diet without having to sit down to a huge plate for carrots, kale and spinach. Every time I make homemade pizza, spinach goes on top (under the sauce). No one even tastes it. 😉
Almost every time I’m making a cream sauce, tomato sauce, or sautéing chicken for a pasta dish, I add spinach. I cook it just enough to wilt before moving on to the next step. So easy!
I’ve even made a green macaroni and cheese one time! (I’ll be honest, that one wasn’t my favorite.)
I either serve hamburgers bun-less on a bed of spinach or I pile some on top in place of lettuce. Adds a nice crunch.
Sausage and Lentil, Ham and Bean, White Bean Italian Sausage, and Vegetable soup are just a few of the soups that I add spinach to. I rough chop it and throw it in at the last minute so it doesn’t get too mushy.
One of my favorite make-ahead lunches is burritos. I made 8 at a time and freeze them individually for my hubby to grab for work if we don’t have leftovers handy. The base of the burrito is a sautéed mix of chicken sausage, green peppers, and spinach. I add rice and cheese before rolling them up in tortillas.
Yes, this is the obvious one. Add spinach to spring mix and top with some marinated grilled chicken and you have a gorgeous Summer meal. Top with strawberries and a lemon vinaigrette and you have a lovely side dish that is sure to impress.
