We love grilled chicken around here!
Its fresh, healthy, and oh so summery to pull something off the grill.
When you’re grilling chicken it is imperative that you’ve marinated it to achieve that perfect flavor. Here’s the good news! You certainly don’t need a recipe!
Grilled chicken is as easy as oil, vinegar, and spice!
When I marinate chicken, I pull the number I need from the freezer Read more on that here. I generally slice them in half (my goodness, chicken breasts have gotten huge!) and throw in enough Olive Oil, vinegar, and spices on them to evenly coat the meat and maybe have a little extra swimming around.
Once these are done percolating, marinatin’, and soaking’ I’m ready to throw them on the grill.
Here are a few chicken marinade combinations to get you started!
Olive Oil, Balsamic vinegar, and “Tuscan” spices (garlic, basil, rosemary, and oregano – if you have any of theses sprouting in the garden it will be even better!)
Enjoy on a salad, hot or cold pasta with tomatoes and mozzarella and Perfecto! Dinner is served!
Olive Oil, White wine or rice vinegar, and a combo of the following – ginger, pepper, garlic, sesame oil (an amazing addition to any flavor lover’s kitchen!), sesame seeds, cumin, and maybe a little coriander.
Toss this grilled chicken on a salad with canned mandarin oranges and almonds and taaada you have an amazing Asian Salad Dinner!
Olive Oil, Lemon juice, garlic, and oregano.
Cut these in strips and toss on naan or pita bread with tomatoes and cucumbers for a delicious chicken gyro!
Olive Oil, Lime Juice, garlic, and cumin. Delicious on a salad topping with black beans and tortilla chips. You can also throw it on pasta or rice for a delicious “bowl” dinner!
Olive Oil, Lime Juice, garlic, basil and sesame oil. So amazing on top of rice with fresh mango and basil on top! If you’re feeling fancy you can make coconut rice by adding coconut milk instead of half of your water!
