My mama always called it breakfast pancake. I think some people say Dutch Baby and perhaps there are other names. It doesn’t really matter however, because this impossibly easy Saturday morning breakfast is amazing and is made at least twice a month in our house. Top it with fried apples or a fresh blueberry compote and you have a match made in heaven!
I start by melting 1/3 stick of butter in my cast iron pan in a oven set to 425. I normally let them heat up together instead of waiting for the preheat because I want this in my belly!
Next, I whisk together 1/2 cup of flour, 2 eggs, and 1/2 cup of milk. Thats all. I whisk out the lumps and if my butter is already melted I pour is straight into the hot cast iron full of melted butter. Yum!
I pop the pan back into the over for 12-15 minutes until the sides and center rise and turn a beautiful golden. Once I pull it out of the oven, I serve immediately. This is not a make ahead type meal, which is ok because you’ll want to eat it right away! Top with fruit, cottage cheese, jam, or syrup.
Keep in mind that you can double the recipe and make this in a 13×9 id you’re feeding more than 2-3 people. Or if you’re really hungry! 🙂
- 2 eggs
- ½ cup flour
- ½ cup milk
- 3 T butter (about ⅓ a stick)
- Melt butter in 10in cast iron pan as oven pre-heats to 425
- Whisk remaining ingredients together
- Pour batter into hot cast iron
- Bake for 12-15 minutes until sides are high and lightly golden
- Enjoy with syrup, fresh fruit, fried apples, or jam.
