Many will argue that fresh lemon juice is best and I agree, when I have time. But for most days, a bottle of lemon juice in the fridge works just great. If you want to edit this to be “Uses for Lemons” thats wonderful! 🙂
Lemony Chicken and Rice (or orzo, quinoa, or noodle) Soup
My new obsession – Lemony Chicken Soup! I’ve done this with orzo, quinoa, brown rice, and barley. Choose the starch of your liking!
Saute 1/2 an onion with lemon pepper (my favorite one is salt free!) and add 2-3 thawed chicken breasts cut into pieces. Once chicken is cooked through, add a big ol splash of lemon juice and some more lemon pepper. Now, stir in 4-6 cups of chicken stock, 4-5 sliced carrots, celery if you have it, and a cup of your choice of grain. Simmer till veggies are tender. Add more liquid if needed. Serve hot with cheese toast. Yum!
Plain greek yogurt, lemon juice, salt and pepper, and cut up cucumber. You have the makings of a delicious Greek inspired dinner. Pull out some grilled chicken, pita bread and you’re all set!
Most recipes that call for buttermilk don’t actually need real buttermilk. (and who has time to go out a buy some?) For the everyday things, I’ve always used my mama’s buttermilk substitute. 1 cup of milk and I tablespoon of lemon juice or vinegar. This can obviously be altered for the amount of buttermilk the recipe calls for, 1/2 cup+1/2 T etc. As you may know by now, I don’t measure a whole lot, so I just add a splash. 🙂

The Elixir of Life (Tea to Cure All)
Greek Roasted Potatoes
Diced red or russet potatoes tossed with lemon juice, garlic, oregano, and salt and pepper roasted on a cookie sheet or jelly roll pan at 400. Stir every 10 minutes until they are golden brown and “roasty.”
A glaze of simply lemon juice and powdered sugar is amazing on pound cake, scones, poppy seed bread, and other baked treats. Whisk together lemon juice and powdered sugar until you have the consistency of syrup, thicker if you want it to stay put instead of running down the sides.
Summer Hair Spray
Lemon juice will give your hair a light hold. It also gently lightens your hair in the sun. Spray through damp hair for beachy waves!
Such a yummy side for a summer meal – fish, pulled pork, just about anything.
Cut or slice several cucumbers and toss with lemon juice, olive oil, salt and pepper and any other spice that suits you. I do lemon pepper or dill generally. Add a tiny sprinkle of sugar. (It does something to cut the acid). Let sit for 30 minutes or so to marinade. Serve!
Cleaning Cutting Boards
Lemon juice not only helps remove stains, but it also kills germs. Spread lemon juice on your cutting board and let sit overnight. Scrub off with salt and rinse in the morning. Fresh!
