I know I’ve already written about my love of Mexican food. But, in writing about the ingredients you ALWAYS should have on hand, I couldn’t disregard the simple tortilla. I always keep these on hand – and have used them for countless types of meals. And let me tell you friends, you can do a LOT with a tortilla!
For me, a tortilla is really many things. It is a piece of bread. It is naan (Indian flatbread). It is pita bread. It is a container for other kinds of food. Basically, just add some filling and cheese – and you have yourself a meal!
Lately, my husband and I are addicted to the small corn tortillas. They add so much flavor – and have far fewer calories than larger flour tortillas. Regardless, its a sad day when I don’t have any kind of tortilla in my fridge.
A little tip! My mama always had at least one package of tortillas frozen in the freezer. Tortillas freeze easily – and also last a long time in your fridge! They definitely have a longer lifespan than most bread.
Here are 10 ways to use a tortilla:
This is a great fast snack, lunch – or even dinner. For a simple meal, just melt in the microwave with cheese and salsa. For something more elaborate, add shredded chicken, taco meat, black, beans, corn…the possibilities are endless. (Tip: if your husband like random snacks at midnight like mine, this makes a great midnight snack. I don’t have to think about what he might want for his 4th meal! Haha.)
Who needs bread when you can add some mustard, lunch meat and provolone between two flour tortillas. These are best on a panini press or grill – but are EASY to microwave. Add a sliced tomato for some flavor! Instant lunch.
A Falafel Wrap
I am sure falafel isn’t a standard in most of your kitchens, but it is in mine! I usually have a boxed Falafel mix in my cabinet – and it makes an easy, YUMMY, meatless meal that both my husband and I love. Instead of keeping pita bread or naan also always on hand, tortillas pair well with Falafel!
A Wrap Sandwich
I’ve been eating a lot of wraps lately – because it is so healthy and easy! Instead of using the wraps that are packaged just for wrap sandwiches, use a tortilla! I like to add: honey mustard, turkey lunchmeat, feta and/or provolone cheese, sliced cucumber, diced tomato and spinach. Delish!
A Gyro Greek Sandwich
Do you love to throw some grilled lamb and cucumber on a pita? Try it on a tortilla! Same concept – fewer ingredients to buy :-).
A Mexican Pizza
This is a favorite of ours I talk about all the time. Top your tortillas with refried beans and layer with your favorites: taco meat, shredded chicken, corn, black beans, pinto beans, salsa and cheese. Cook at 350 until the cheese melts. Top with lettuce, tomato, more salsa and/or jalepenos! The easiest meal :-). See more Mexican ideas here!
A Cheese and Fruit Snack Plate
This is one of my favorite snacks: Sliced cheese, a cut up piece of fruit, a toasted tortilla broken up and maybe some olives? Now your tortilla is replacing crackers!
A Cinnamon Sugar Toast
I love to butter a tortilla (flour not corn!) and top with cinnamon sugar. Throw it into the oven to toast and voila! Its a gooey sweet tortilla dessert! This is also perfect as a side when you are serving breakfast! If you need a sweet bread idea to accompany eggs and hashbrowns – try some homemade cinnamon sugar tortilla chips :-).
A Mini Pizza
Don’t want to make pizza dough? Top tortillas with marinara sauce, cheese and pepperoni for a quick pizza snack! (Your kids will love this :))
A Peanut Butter and Banana Wrap
This is soo good! Just spread peanut butter on your tortilla and roll around a banana. Cut into pieces and eat! You can also add honey and nutella for a quick complete breakfast!
Bonus: Breakfast Burritos
I LOVE making breakfast burritos for a quick healthy breakfast. Scramble some eggs, and add your eggs, salsa, cheese, and any variation of the following to your tortillas: sausage, sauted onions and peppers, spinach or jalepeno peppers. So yum!
